Brown Sugar & Spice Shortbread
Ingredients:
1 cup butter, softened
1/2 cup packed brown sugar
2 & 1/4 cups all-purpose flour
1/4 tsp each ground cinnamon and ground nutmeg
Method:
In a mixing bowl, first combine the spices, then cream butter & sugar with the spices.
Gradually stir in the flour.
Turn onto a lightly floured surface and knead until smooth, about 3 minutes.
Pat into an 8 inch by 8 inch baking pan.
Bake at 300 F or 150 C for 25 minutes or until edges begin to turn a golden brown.
Cool for 5 minutes before cutting, then allow to finish cooling in the pan before inverting it over a cutting board to remove pieces from pan.
